I cannot remember which 2 wires to run to a shut-off switch.
I have three. I only whant to shut down the inside so it does not freeze up on me. I need to make sure my timer does not shut off.

I assume you mean to shut off the evaporator fans so that you can work in the freezer without freezing your butt off. When I install Walk-in freezers I always install a switch on the evaporator coil that breaks power to the fans and the solenoid valve. That makes servicing very easy. If the installation does not have a solenoid valve you will have to shut off the condensing unit as well as the fans to keep from freezing up the coil.
It's only a shock if your not expecting it!
