What cause banging noise in a steam heating system? Is it the most upper floor valve is not openning up at the radiator? Or is it the water is stuck in the piping somewhere? I haven't have a chance to look at it yet. The problem was addressed to me last year from a friend. It is a one pipe system.

There are many reasons this might occur. One is as you mentioned improper grading of pipes so that water doesn't run back to the boiler and when steam hits the water it makes a knocking noise. Sometimes it is the expansion of the pipes resting on wood framing etc and it will knock. Make sure the pressure switch and pigtail are clean and set to cut off as low as possible... probably about 1 LB with a 1/2 LB differential. Radiators should be graded toward the supply line so condensed steam can return to the boiler.

From what your saying, I would look at checking your rad air vents.
below is info from Watts Regulator on their brand of steam rad air vent.
