Replaced an old mercury thermostat with the Honeywell RTH230B programmable... I turned it to cool, and it just stays on and keeps cooling the house well below the temperature programmed. For example, I got up this morning, the A/C was on, the program called for 71 degrees and it was already down to 65...
Any ideas?

I had the same problem but not because of changing the thermostat. Houston told me that my problem was caused by a short between the red wire and the yellow wire. He was correct, those two wires were shorted outside next to the heat pump. However, since you just changed your thermostat, your problem is likely to be in how you wired your new thermostat.
Houston will probably give you some excellent advice on this.
Just trying to keep cool while the power is still on!

List the terminals used and the color wire connected to each on your old stat.
I suspect that this stat is not compatible with your multistage heat pump.

Well, it's not a heat pump, I can assure you of that...
Wiring, well it's a 4-wire system, red to Rh, white to W, green to G, and yellow to Y. There is also the jumper from Rh to Rc.
It's a normal system with a gas furnace and A/C.
But when I set the thermostat on cool it just keeps cooling. The thermometer on the thermostat is working, but it's just not turning it off when it's reached the programmed temp.

If this problem only occurs when you set your stat to cool, you need a new stat. If it always energized Y regardless of mode setting it could have been a short in your wiring, possibly behind your stat.
I wouldn't recommend anything below the Honeywell 5000 series.
