I have a 2500 sqft home with Cathedral ceilings and 9ft ceilings throughout the downstairs.
We have 2 Lennox unit's, one up and one down.
The down stairs unit has been serviced 3 times in the last month and I think it may still be having issues.

The first service call was due to there was no cold air coming out of the vents, the unit was recharged with Freon.

Second call 1 week later was due to no air coming out at all, Circuit board and Thermostat was replaced.

The Third call was earlier this week due to no cold air coming out again, a leak was found one of the compressor lines and all the Freon had leaked out, the leak was repaired and unit was recharged.

Since we have had so many issues in a short period of time I am constantly monitoring the Temperature and the air flow.
Last night I get home and the Unit is set on 73 but the indoor temp is 75 (out door temp is 85, highs for the day was 91), I check the vents and air is coming out but it is not cold, this is at about 6:30 pm.
About an hour later I check the vents again and really cold air is coming out and the indoor temp has dropped to 74 prior to going to bed the temp was at the set 73.

Is it normal for the output air temp to vary throughout the day like that??
What should by my expectations on how cool I can keep my home taking in consideration the high ceilings and high outdoor temp?
Should I call the service guy back out to check it again?

No, they just screw every customer they service!
Ace you slam every machine other than the one that most techs don't like "Lennox"
I on the other hand think that there are many units out there that are good, Rheem, American Standard, Trane, Carrier, etc.
I have the right to say Lennox suck, if you remember correctly you started all this because you think I don't have a right to my opinion, I get along with everyone on this sight, even Yuri who is a die hard Lennox fan, you on the other hand get along with no one on here, every one thinks your a pompous ass due to your ignorance and literacy, I can't remember anyone having anything good to say about your act.
How about we try something new, you stop acting like you, and I'll stop ripping into the yugo of the furnace world, the love of your life, the big L, you and Dave lennox can slip into the night and have your little love affair without worry of the big bad fitter talking bad about your buddy dave?
Do we have a deal?

Welcome to the wonderful world of lennox junk! You might as well get used to having your Lennox dealer over for dinner alot because that crap unit heating your house is just starting to show it's teeth!
They are trouble some units, even if installed properly they have more problems that most, just look on this sight and see all the Lennox units that have problems, there is only two reasons for that.
1. Lennox is a low grade poorly made unit
2. lennox dealers are some of the lowest grade techs out there and aren't trained very well.
Now I now some techs out here like Yuri know what they are doing, and some like Ace don't, so I think #1 is the safest bet, lennox is junk!
Now that i got that out I would try other lennox dealer to check your system, you might go thru a few before you find one that can read instructions, SPELL, and work on systems properly, ask yuri if he's in your area, maybe his company could help.

Please ignore Acefurnacefxer he hates himself for being a theft It's hard when you can't look at yourself in the mirror.

I like Fitter but he can be a bit harsh on Lennox and hasn't serviced residential for 8 years is it? Lennox, Carrier and Trane are the top 3 in my 29 years of experience. The servicetech must do a proper pressure test on the system and not just recharge it. Unfortunately some don't and that has nothing to do with the brand. Most problems are installation related. You may want to try another service company if the problem re-occurs and watch the guy and make sure he does a pressure test. I sell lots of Lennox and Marchvac and Ace do also. Kind of like Ford, GM and Chrysler. They all have their share of problems and require a good servicetech. Lennox has 85% of the rooftop equipment market in my area so they must be doing something right. Manitoba is a long way from SC (South Carolina)? and I'm into the heating season now. Just got promoted and a brand new van and have to be a working service manager/tech/Mother Goose to the newbies.

Goodman has 85% of the rooftop equipment market by me, so what do you think they are doing right? It's not what they are doing right , it's how cheap they are, I know commerical and it all comes down to price, the cheapest units get put on the roof, builder cut cost any where they can, cheap suckers they are!LOL
