Consider me dumb, but my A/C capacitor(s) keep dying. Replaced 3 times. Run capacitor 40 + 5 MFD @ 370V. Question is will a capacitor rated 40 + 5 MFD @ 440V work ok?

It will work the same as the 370v one. It will also die like the others if you don't find the cause of the problem. To replace something once is normal. twice is a coincidence. 3 times means that something else is wrong.
