I am looking for new HVAC system for my house. Many people have said that I need for the contractors to do System load calculations in order to size my system correctly.

Why, when I ask the contractors to do sizing calculations for my house, they look at me like I asked them to eat some doggy poo?

They all give me double talk and look at my old system and base their quotes on that (saying that the old system's size will do).

Yes, to be be sure the system is properly sized, a load calculation needs to be done. The shortcut is to use the same size as what is existing, but things change over time.
The reason you are getting the looks, is probably because to do the load calculation, actually involves doing measurements and doing actual work, not guessing.
If the load calculation shows that you need to change the sizing for the unit, be sure to verify the ductwork also should be resized and replaced.

So would these calculations involve more than 15 minutes of work? Or is this a plug and chug program on a laptop?

It would probably take at least 15 minutes just to get the measurements needed. These include, house direction, window/door types and sizes, insulation (floor/ceiling/wall) and house construction (brick/wood/vinyl). You can do the paperwork, or have a computerized load calc program. Either way, I meant you have to actually do some work, not guess.
