I have a traditional Rudd thermostat 6 wires connected as follows:
G - green wire
R - red wire
B - no wire
O - blue wire
Y - yellow wire
W2 - white wire
X - dark gray wire
W2 to E - jumper wire (light gray)
L - no wire

I'm trying to connect a Hunter 44110 which has 5 wire connection labeled as follows:
G -
RC to RH - jumper wire (red)
Y -
W -

How do I know which wires to connect where?

Your new stat is not compatible with your multistage heat pump.

I recommend the Honeywell RTH7400.
G = green
Rc & R = red
O/B = blue
Y = yellow
Aux & E = white
C = dark grey
option 170 = 7
option 190 = 0 (I would expect this to be 1 but you said youre blue wire connected to O not B as it would with A Ruud heatpump)
240 = 9

Notice that you don't have a W1 wire, only W2. This is because first stage heat is your heatpump.
Notice that you have an O terminal in use. This is to energize the reversing valve on heatpumps for cool mode. Standard systems do not use an O terminal.

Standard systems would have terminals like that 44110.

Most (but not all) heatpump stats have an emergency heat mode.
No standard stats will have an emergency heat mode.

I can't figure out how so many people do not know that they have a heat pump.

You'd have about $750.
