I am having a new AC system installed - Carrier Infinity 21 SEER. The specs call for a 50amp breaker - according to the specs, it says Max Fuse or Circuit Breaker Amps = 50. Is it okay to use a 50amp fuse at the panel (6# wire) and a 60A nonfused disconnect box?

Absolutely OK. I think all of those disconnects are 60A.
BTW, The Infinity system is arguably the best and most efficient system available. My guess is that you will love it.
