The condenser unit on the side of my furnace makes this humming noise and will not go off. It sounds like the motor's running in the condenser. The air conditioning works fine. Is it safe to unplug the condenser unit?

You must be referring to the indoor air handler/evaporator. I really need more information. Do you mean it continues to run when the thermostat has reached temperature and the outside unit is off?

Could be a stuck relay. If it runs all the time it will run up the electric bill. If you are not experienced with electrical components I would advice getting a good technician over.

Do you feel airflow at the grills with the stat off?

Buzzing transformers are very annoying but do not affect operation. I would still have it replaced if this is the problem.
