Proper Method to charge heat-pump in the winter

I'm low on a charge. I have a dual K-type digital thermometer, manifold gauges and refrigerant. As I understand it is very hard to charge a system in the winter? Where do I measure my temperatures etc??

Can I simply measure the temp of the evaporator coil and add charge until the temp increases?
