Is this a place I could get assistance heating 800+ gallons of water with * I'm considering a small tankless water heater connected to PEX. The PEX would coil in the sump as a heat exchanger. Maybe a Ranco controlling the pump. So all I have is a general idea. Is this *

I wouldn't think pex would be a great heat exchanger, besides the fact that it is garbage. Copper is the only way to go or direct mixing of the water would probably be the best route. In any case sounds like an Engineer is in order to draw up some plans.
